Baked Salmon with Dill Sauce
Ingredients:
-4 (3-4oz) salmon fillets
-2 tbsp olive oil
-1 tbsp balsamic vinegar
-1 tbsp lemon juice
-1/2 tsp lemon pepper
- 1/2 tsp dried oregano
-1/2 tsp garlic powder
-1/2 tsp salt
DILL SAUCE:
-1/2 cup non-fat plain Greek yogurt
-2 tbsp light mayo
-1 tbsp chopped dill
-1 minced garlic clove
-1/2 tbsp lemon juice
-1 tsp red wine vinegar
-1/4 tsp dried oregano
-1/4 tsp dried parsley
-salt and pepper to taste
Directions:
-Whisk olive oil, lemon juice, balsamic and herbs together and pour over salmon in a 9x13 baking dish, let marinate 15-20 minutes
-Preheat oven to 400 F
-For Dill sauce, mix all ingredients together, cover and refrigerate.
-Bake salmon for 12-15 minutes until cooked through.
-Serve topped with Dill Sauce.
