Pumpkin Protein Brownies 

Ingredients: 

  • 1 (14oz) can pumpkin puree (not pumpkin pie filling)

  • 2 large eggs 

  • 1 cup water or milk of choice 

  • 1.5-2 tsp liquid stevia or sugar/sweetener equal to 1 cup 

  • 1/2 cup chocolate protein powder 

  • 1/4 cup unsweetened cocoa powder 

  • 1/4 cup almond flour 

  • 1/2-1 tsp baking powder

Directions: 

  1. Mix together the pumpkin puree, eggs, water/milk, and stevia until smooth, then add in the remaining ingredients and mix just until there are no large lumps. 

  2. Pour into a greased 9x13 baking dish and bake at 350 degrees for 30-45 minutes, or until the top is dry to the touch. 

  3. Serve with Greek yogurt and fruit for a healthy snack/dessert.

*Note: additional almond flour, or dry milk powder can be substituted for the protein powder.
