Pumpkin Protein Brownies
Ingredients:

1 (14oz) can pumpkin puree (not pumpkin pie filling)

2 large eggs

1 cup water or milk of choice
-
1.5-2 tsp liquid stevia or sugar/sweetener equal to 1 cup
-
1/2 cup chocolate protein powder
-
1/4 cup unsweetened cocoa powder
-
1/4 cup almond flour
-
1/2-1 tsp baking powder

Directions:

Mix together the pumpkin puree, eggs, water/milk, and stevia until smooth, then add in the remaining ingredients and mix just until there are no large lumps.

Pour into a greased 9x13 baking dish and bake at 350 degrees for 30-45 minutes, or until the top is dry to the touch.

Serve with Greek yogurt and fruit for a healthy snack/dessert.
*Note: additional almond flour, or dry milk powder can be substituted for the protein powder.
