Mini Veggie Quiche Cups
Ingredients:
16 oz Cottage Cheese, low fat
10 oz Frozen spinach, thawed, drained well
1 cup Mozzarella cheese, skim
2 Eggs
2 Egg whites
½ cup Red bell pepper, chopped
⅓ cup Parmesan cheese, grated
1 teaspoon Oregano, dried
1 clove Garlic, minced
½ teaspoon Red pepper flakes
Cooking spray
Directions:
1. PREHEAT the oven to 350°F.
2. MIX all ingredients until well blended. SPRAY a 12 cup muffin tin with cooking spray.
3. SPOON ⅓ c mixture into each muffin cup. Evenly DIVIDE any mixture that is leftover between the 12 cups.
4. BAKE for 30 minutes or until center is set. Let SET for 5 minutes.
