Chocolate Sweet Potato Muffins

Ingredients: 

  • 200 grams cooked mashed sweet potato (about ¾ cup)

  • ¾ cup plain or vanilla Greek yogurt

  • 2 eggs or ½ cup egg whites

  • ¼ cup milk

  • ¼ cup maple syrup

  • 6-12 stevia packets (optional)

  • ½ cup cocoa powder

  • ½ cup whole wheat flour

  • 1 tsp baking soda

  • ¼ tsp salt

  • 1 tablespoon mini chocolate chips

Directions: 

1. Preheat the oven to 350 degrees Fahrenheit.

2. Line a muffin tin with 12 muffin liners and spray with cooking spray. 

3. Mix together the first 6 ingredients well.  4. In a separate bowl mix together the remaining ingredients (or carefully mix together on top of the wet ingredients before fully mixing), then fold the dry mixture into the wet mixture. 

5. Pour into the greased muffin liners and bake for 25-35 minutes, or until the tops of the muffins appear firm. 

6. Store leftovers in the refrigerator.
