Cauliflower Sweet Potato Mash


1 head medium cauliflower 

2 medium sweet potatoes (peeled)

1/2 cup coconut milk 

1/2 cup water 

1 tsp celtic sea salt 

2 tbsp butter 


1/2 tsp cinnamon 

1/4 tsp nutmeg 

1/4 cup pecans (chopped)

2 tbsp pure maple syrup 


2 tbsp olive oil

1/2 tsp black pepper 

1 tbsp chives (chopped)


1. Wash the cauliflower and chop into florets. Wash and peel sweet potatoes and chop into cubes.

2. Place all the main ingredients (sweet potatoes, cauliflower, coconut milk, water and salt) in a pot and bring to a boil. Put the cap on, and reduce to a simmer for 30 minutes until sweet potatoes are fork tender. 

3. Transfer ingredients to a blender or use an immersion blender and blend until smooth. 
4. If serving sweet: Add toppings and enjoy!
